So, funny story…
Yesterday I had put a roast in the crock pot after church to make some shredded barbacoa. The last part of cooking was almost done and I just had to saute the peppers, onions and jalapenos. I was sooo excited about this meal because I had been smelling it all day. I literally dreamt about it as I napped on the couch. I go to start cooking up the onions. Just a few minutes after turning the stove on the power goes out.
(after freaking out for like 5 minutes that I didn’t pay the bill) We discovered that nearly 200 houses in our area were without power, probably until close to 10pm. Since I couldn’t finish cooking and the house was going to get super hot we decided to go out for dinner. We went out and had a good time but as we were driving home Mr Dreamer asked if I’d turned off the stove.
*silence*
uhhh… nope. We rushed home to find the power back on and the house filling with smoke as my plastic spoon melted into the pan I left on the stove. It was seriously close to being something really bad. Now that it wasn’t we can laugh about it.
Also, our garage door opener wasn’t working when we left for dinner so we pulled the garage down manually… which messed up our garage door opener again (we’ve had problems with it before) so we ended up putting in a new garage door opener today.
Lets just say that was a really expensive and nearly tragic power outage.
Oh the things we do for a night out. ha.
Anyway, I finally got to finish cooking the barbacoa tonight. Have you tried Chipotle’s barbacoa? It is uh-may-zing. I love chipotle.
I found this recipe on Paleomg.com. (one of my favorite sites to find recipes. great food and hilarious writing = WIN)
After sitting for an extra day I think it was even better. We added some beans and topped with low fat cheese (not so Paleo, I know…) It was seriously delicious. You have to try this.
After eating dinner I made up some Coconut Milk Mousse. I’m not sure where this recipe came from, I’ve seen it all over the place. I just modified it to my taste from what I’ve learned (if you know where this idea originated from let me know so I can credit the source!)
Coconut Milk Mousse
1-2 Cans Full Fat Coconut Milk
1/4-1/2 cup cocoa powder
1 tsp Vanilla
1 tablespoon (or to taste) Honey or other sweetener
Basically you put your cans of coconut milk in the fridge at least over night.
Open the cans and there should be a thick white cream, scoop that out. Leave the extra liquid (you can use it for other recipes or smoothies)
Add the rest of your ingredients and whip until smooth.
Refrigerate for at least another hour to thicken.
Super yum.
