What I Ate Wednesday: First Edition!

I’m so excited to join in with Jen from Peas & Crayons for WIAW! I’ve been meaning to do this for awhile but I always forget to take pictures until its too late (aka- the food is already in my belly!)My day started with GNC Pro Sculpt pre-CrossFit – 4:40am
GNC ProSculptDuring CrossFit I drank my Blox Silk Amino Acids, they really do help! (Well, they don’t help you overcome an irrational fear of box jumps…) 6:20am- Post CrossFit Protein, right now we are using Level 1. It’s apparently made locally. We got it from Supplement SuperstoresAfter showering I made breakfast. I typically make the same type of breakfast every day: eggs, organic bacon from local farmer’s market, and some kind of veggies. Today I added a piece of sargento thin sliced colby cheese. Around 10:30-11 I usually have some kind of small snack. Today it was a handful of dry roasted almonds.Throughout the week the meal I struggle with the most is lunch. The typical turkey sandwich is out the window with the Paleo-esque diet we try to have. I decided this week I was going to make a big batch of a copy cat version of Chiptole’s Naked Burrito Bowl. I put a couple of chicken breasts in the slow cooker with a can of diced tomatoes and a can of Rotel and let it cook for a few hours. Then I took the chicken and shredded it using my Kitchen Aid (saw this on pinterest… it is so brilliant!). I added a bag of frozen peppers, a can of black beans, some garlic salt, cumin and chili powder and let cook about another hour. Tada! Fajita Bowls for the week! I know dairy isn’t paleo, but I still use it sparingly. I topped my Fajita bowl with some shredded cheese and a dollop of sour cream.I had to try the Zico Chocolate Coconut water that I finally found- YUM! (I may or may not have cleared out the shelf of this stuff when I found it…)zico chocolate coconut waterAlso- the hubs brought me home a Starbucks Refresher. Have you had it yet? SO good. And the big size is 120 calories. In my opinion, a better option than a huge latte! I also had a CLICK protein shake with almond milk as an afternoon snack. Caffeine overload. Oops. Starbucks Refresher, Click Espresso ProteinFor dinner I just kinda winged it. I knew I had to use Pork Chops, since thats what I defrosted. I also have a ton of veggies that my Father in law gave us from his garden, so I wanted to use those too. I would typically have a starch or grain along with the meat and veggies, but I decided to make “mashed” cauliflower. I boiled some frozen cauliflower, added a little butter and a lot of garlic salt and then mashed them up. It wasn’t my favorite meal, but it got the job done. After dinner I went for a quick 1 mile jog around the neighborhood. It’s one week until the end of the 60 Day Fat Loss Challenge, so I’m trying to do everything I can to make this week count!What is your current favorite meal?

    1. OH MAN, i’m addicted to nut butter… peanut, almond, sunflower… I have a almost a whole shelf dedicated to different nut butters in my pantry. Thank goodness for PB2, saves me some calories LOL

    We made faux-buritto bowls the other night, too. I’m impressed with your menu – I would have snuck in a handful a chocolate chips with my almonds.

    1. It is! It was the first I’ve tried of it… and I love it! I don’t like plain coconut milk, but love the benefits of it. Adding chocolate solves everything!

    1. I had another Chocolate Coconut water after my workout tonight! SO good. I do salads a lot too… Mostly I just forget to plan for lunch until i’m starving. Oops…
